New Year Lunch

On New Year’s Day I made delicious Brie and prosciutto sandwiches. On the side was my favorite no-fuss salad, consisting of a half head of artisan lettuce (not pre-cut because the eater should do the work) and some fresh tomatoes (ah the joys of the farmer’s market in South Florida in “the winter”) topped with freshly made vinaigrette.

For the vinaigrette I like to use a washed and sanitized jar. Put in your vinegar or other acid first, as it will stay on the bottom. I used lime juice because it is what I had on hand. Add olive oil so that the oil is two times the acid (of course this is to taste) which u can readily measure/see through the side of the jar. Add a bit of mustard and salt and pepper, put the lid on, and shake shake shake! Voila! Instance vinaigrette. Store remaining in fridge.

This meal was repeated the next day and went great with the afternoon movie on my tv: Tron. U know, the original.
